Salted Almond Butter Chocolate Hearts

Salted Almond Butter Chocolate Hearts


Ingredients:

  • 1/2 cup almond butter
  • 1/2 cup powdered sugar
  • 1 T honey
  • 24 Hershey's Kisses
  • 2 T heavy cream
  • sprinkle of coarse salt
Directions:

1. Combine almond butter, powdered sugar, and honey (it helped to soften the almond butter in the microwave about 30 seconds). 
2. Divide the mixture into 6 portions and press each portion into a heart-shaped silicone muffin pan. 
3. Melt chocolate and heavy cream. 
4. Pour chocolate mixture over almond butter mixture. Tap on the counter to even out.
5. Sprinkle with coarse salt. Place in the freezer about 1 hour.

Makes 6 hearts.

Barney Butter Almond Butter Review & Giveaway ~ Ends 8/3

I was fortunate enough to win TWO samples of Barney Butter: the first was at a Twitter Party about healthy snacking, and the second was on the Barney Butter Facebook wall for tagging a picture of their products at my local Whole Foods. Now, I was a bit skeptical at first because I have tried other almond butters and I was not thoroughly impressed. However, Barney Butter Almond Butter is exceptionally delicious! It's also a healthy alternative to peanut butter. It is an all natural, peanut-free, gluten-free product. Here are the facts when compared to peanut butter:

As soon as I opened my package, I tried it and immediately looked at their website to feel inspired to create my own almond butter cookie recipe. They also have recipes for entrees, snacks, and other desserts, including gluten-free and dairy-free options.

Here's what I came up with today based on one of the recipes on the website ~ They are so yummy!

Barney Butter Almond Butter & Raspberry Jam Cookies
Recipe makes about 20 small sandwich cookies















Ingredients:

1 1/4 cups flour

1/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 stick of butter

1/2 cup brown sugar

1/2 cup sugar

1/2 cup Crunchy Barney Butter

1 egg

1 tsp vanilla

1/3 cup raspberry jam


Directions:
Preheat the oven to 350 degrees F.
Mix the flour, baking powder, baking soda, and salt in a medium bowl. Cream the butter, almond butter, and sugars together in an electric mixer until well-blended. Add the egg and vanilla until combined. Slowly mix the flour mixture in with the butter mixture. Divide the batter in half. Make 20 cookies that are one tablespoon each. Press all the cookies flat with your fingers so they are about 1/3 inch thick. Follow the same steps to make the second half of the cookies, only cut a small circle in the middle of each one. I used a cake-decorating tip to make the perfect-sized circles. Place all cookies in the oven and bake for 10 - 12 minutes. Allow to cool on a cooling rack. Spread about a 1/2 t of jam on the complete cookie and place a cookie with a hole on top (to make a window to see the jam). Enjoy!
